Easy Black Bean Salad

Ingredients
1 can black beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
1 red bell pepper, diced
1/2 cup cherry tomatoes, halved
1/4 cup red onion, finely diced
1/4 cup fresh cilantro, chopped

½ jalapeño diced (optional spicy preference)
1 to 2 limes, juiced
1 tablespoon olive oil
1/2 teaspoon ground cumin
Salt and pepper to taste
Optional: 1 diced avocado

Instructions
In a large bowl, mix black beans, corn, bell pepper, cherry tomatoes, red onion, and cilantro.
Drizzle with lime juice and olive oil.
Sprinkle in the cumin, salt, and pepper.
Toss everything together until well combined.
Add avocado if using just before serving.
Store in the fridge in meal prep containers for up to 3 days.Grocery List
