This is my favorite go-to breakfast. It’s an amazing balance of healthy fats, carbohydrates, protein and energy to kick off the day. I love to make this a couple times a week.
You can prepare this with a scrambled egg or a sunny side up egg. Whichever you prefer!

Ingredients
- 1 slice of sourdough bread (I love grabbing a fresh loaf from the bakery at the grocery store)
 - 1/2 ripe avocado
 - 1 egg
 - Olive oil or spray
 - Help Hearts (optional)
 - Salt and pepper (to taste)
 - Lemon
 
Instructions
- Toast Your Bread: – Optional to toast in a toaster or on a pan. Either way, spray with a little olive oil.
- Heat your pan on medium heat and lightly spray it with olive oil.
 - Place your slice of bread in the pan and toast until golden brown on both sides. Remove from the pan and set aside.
 
 - Prepare Your Avocado:
- Scoop your avocado and mash it with a fork or cut into cubes. Season with a pinch of salt and pepper (I love adding a squeeze of lemon juice)
 
 - Sunny Side Up Egg (or scramble):
- Spray your pan with a little more olive oil and reduce heat to medium-low.
 - Crack your egg into the pan and cook until the whites are set but the yolk is still runny. (If you prefer a firmer yolk, cover the pan for 1–2 minutes.)
 
 - Assemble:
- Spread your avocado over your toasted bread.
 - Gently place the sunny-side-up egg on top of the avocado
 - Sprinkle with salt, pepper, and any additional toppings like red pepper flakes, everything bagel seasoning, or hempseeds
