This is my favorite go-to breakfast. It’s an amazing balance of healthy fats, carbohydrates, protein and energy to kick off the day. I love to make this a couple times a week.

You can prepare this with a scrambled egg or a sunny side up egg. Whichever you prefer!


Ingredients

  • 1 slice of sourdough bread (I love grabbing a fresh loaf from the bakery at the grocery store)
  • 1/2 ripe avocado
  • 1 egg
  • Olive oil or spray
  • Help Hearts (optional)
  • Salt and pepper (to taste)
  • Lemon

Instructions

  1. Toast Your Bread: – Optional to toast in a toaster or on a pan. Either way, spray with a little olive oil.
    • Heat your pan on medium heat and lightly spray it with olive oil.
    • Place your slice of bread in the pan and toast until golden brown on both sides. Remove from the pan and set aside.
  2. Prepare Your Avocado:
    • Scoop your avocado and mash it with a fork or cut into cubes. Season with a pinch of salt and pepper (I love adding a squeeze of lemon juice)
  3. Sunny Side Up Egg (or scramble):
    • Spray your pan with a little more olive oil and reduce heat to medium-low.
    • Crack your egg into the pan and cook until the whites are set but the yolk is still runny. (If you prefer a firmer yolk, cover the pan for 1–2 minutes.)
  4. Assemble:
    • Spread your avocado over your toasted bread.
    • Gently place the sunny-side-up egg on top of the avocado
    • Sprinkle with salt, pepper, and any additional toppings like red pepper flakes, everything bagel seasoning, or hempseeds
