- 1 tbsp honey
- 1 tbs sriracha (If you like spice)
- 1 tbsp lime juice
- Salt & pepper to taste
For the Mango Salsa:
- 1 ripe mango, diced
- 1/4 red onion, finely diced
- 1 tbsp chopped cilantro
- Juice of 1 lime
- Pinch of salt
For the Bowl:
- 2 cups cooked white jasmine rice
- 1 cup pineapple chunks (fresh or grilled)

Instructions
1. Make the Mango Salsa
In a small bowl, combine diced mango, red bell pepper, red onion, cilantro, lime juice, and a pinch of salt. Stir and set aside in the fridge to let the flavors meld.
2. Cook the Shrimp
In a pan over medium heat, warm sesame oil. Add minced garlic and sauté for 30 seconds until fragrant. Add the shrimp, soy sauce, honey, lime juice, and sriracha. Cook shrimp for about 2–3 minutes per side, or until pink and slightly caramelized. Remove from heat.
3. Assemble the Bowl
Spoon a generous portion of rice into each bowl. Top with shrimp, pineapple chunks, mango salsa, and sliced avocado if using. Sprinkle with chopped green onion and cilantro. Serve with lime wedges on the side.
