Chicken Zucchini Noodle Stir-Fry
A light, flavorful dish packed with protein and fresh veggies.
Ingredients:
- 1 lb chicken breast, sliced into strips
- 3 medium zucchinis, spiralized into noodles
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 2 tbsp coconut aminos
- 1 tbsp avocado oil
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 1/2 tsp sesame oil (optional, for flavor)
- 2 tbsp sesame seeds or cashews for garnish
Instructions:
- Heat avocado oil in a large skillet over medium-high heat. Add chicken and cook until browned. Remove and set aside.
- In the same skillet, sauté garlic and ginger for 1 minute. Add broccoli, bell pepper, and carrot. Stir-fry for 5 minutes.
- Add zucchini noodles, coconut aminos, and sesame oil. Stir-fry for 3 minutes.
- Return chicken to the skillet and toss to combine. Cook for 2 more minutes.
- Garnish with sesame seeds or cashews before serving.
