Ingredients:
⅓ cup coconut oil, melted (or grass-fed butter)
1/2 cup pure maple syrup (or raw honey)
2 large eggs
1 tsp pure vanilla extract
1/2 cup coconut flour
1/4 tsp baking soda
1/4 tsp sea salt
⅓ cup white chocolate chips
Instructions:
1. Preheat oven: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
2. Mix wet ingredients: In a large bowl, whisk together the melted coconut oil, maple syrup, eggs, and vanilla until smooth.
3. Add dry ingredients: Stir in coconut flour, baking soda, and sea salt until fully combined. The batter will be thick.
4. Fold in chocolate chips: Gently fold in chocolate chips, if using.
5. Bake: Spread the batter evenly in the prepared baking dish. Bake for 18-22 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
6. Cool and slice: Allow to cool completely before slicing into squares.
