
We made this soup and it lasted for days! We had it for dinner, lunch and another dinner!
- 1 pound shredded cooked chicken
- 1 cup wild rice
- 1 tablespoon olive oil
- 1 onion, diced
- 3 carrots, sliced
- 3 celery stalks, chopped
- 4 cups chicken broth
- 1 cup coconut milk
- 1 teaspoon thyme
- Salt and pepper
Instructions
- Cook your wild rice.
- Sauté onion, carrots, and celery for 8 minutes.
- Add broth, chicken, rice, thyme, salt, and pepper. Simmer 10 minutes.
- Stir in coconut milk and warm through.
- Add in salt and pepper to taste
