We made this soup and it lasted for days! We had it for dinner, lunch and another dinner! 

  • 1 pound shredded cooked chicken
  • 1 cup wild rice
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 1 teaspoon thyme
  • Salt and pepper

Instructions

  1. Cook your wild rice.
  2. Sauté onion, carrots, and celery for 8 minutes.
  3. Add broth, chicken, rice, thyme, salt, and pepper. Simmer 10 minutes.
  4. Stir in coconut milk and warm through.
  5. Add in salt and pepper to taste
