
Cranberry Orange Chia Glow Pudding
This is a perfect meal prep recipe.
Makes 3-4 servings. Double the recipe for more servings for meal prep!
- 1 ½ cups unsweetened almond milk
- ½ cup Greek yogurt or coconut yogurt
- 1 teaspoon vanilla
- Zest of one orange
- 2 tablespoons maple syrup
- 6 tablespoons chia seeds
- 1/2 cup fresh cranberries (see instructions below)
- 2 tablespoons orange juice
- Pinch of cinnamon
Instructions
- Whisk milk, yogurt, vanilla, orange zest, maple syrup, and chia.
- Let sit 10 minutes. Stir again and refrigerate 2 hours or overnight.
- Simmer cranberries, orange juice, and cinnamon until berries burst.
- Top chia pudding with warm cranberry compote.
