Cranberry Orange Chia Glow Pudding

This is a perfect meal prep recipe.

Makes 3-4 servings. Double the recipe for more servings for meal prep! 

  • 1 ½ cups unsweetened almond milk
  • ½ cup Greek yogurt or coconut yogurt
  • 1 teaspoon vanilla
  • Zest of one orange
  • 2 tablespoons maple syrup
  • 6 tablespoons chia seeds
  • 1/2 cup fresh cranberries (see instructions below) 
  • 2 tablespoons orange juice
  • Pinch of cinnamon

Instructions

  1. Whisk milk, yogurt, vanilla, orange zest, maple syrup, and chia.
  2. Let sit 10 minutes. Stir again and refrigerate 2 hours or overnight.
  3. Simmer cranberries, orange juice, and cinnamon until berries burst.
  4. Top chia pudding with warm cranberry compote.
