Ingredients:
- 1.5 tbsp avocado oil
- 1.5 leeks, sliced (white and light green parts)
- 3 cups broccoli florets
- 3 cups baby spinach
- 2 zucchinis, diced
- 6 cups low-sodium vegetable broth
- 3/4 cup fresh parsley
- 1/2 tsp spirulina powder
- Juice of 1 lemon
- rosmary
- Pink Himalayan salt and pepper to taste
Instructions:
- Heat avocado oil in a pot. Sauté leeks for 3 minutes. Add broccoli, spinach, and zucchini.
- Pour in vegetable broth and simmer for 15 minutes.
- Blend the soup until creamy. Stir in spirulina and lemon juice. Adjust with salt and pepper.
- Serve warm, garnished with parsley.
