Dijon Vinaigrette
Ingredients:
- 3 tbsp extra virgin olive oil
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar (or white wine vinegar)
- 1 tbsp freshly squeezed lemon juice
- 1 tsp honey (optional, for slight sweetness)
- 1 small garlic clove, minced
- Pinch of sea salt
- Freshly ground black pepper to taste
Directions:
- In a small bowl or jar, whisk together the Dijon mustard, vinegar, lemon juice, and honey (if using) until smooth.
- Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing.
- Stir in the minced garlic, salt, and pepper.
- Taste and adjust seasonings as needed.
- Store in an airtight container in the fridge for up to one week. Shake well before use.
