Dijon Vinaigrette


Ingredients:

  • 3 tbsp extra virgin olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar (or white wine vinegar)
  • 1 tbsp freshly squeezed lemon juice
  • 1 tsp honey (optional, for slight sweetness)
  • 1 small garlic clove, minced
  • Pinch of sea salt
  • Freshly ground black pepper to taste

Directions:

  1. In a small bowl or jar, whisk together the Dijon mustard, vinegar, lemon juice, and honey (if using) until smooth.
  2. Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing.
  3. Stir in the minced garlic, salt, and pepper.
  4. Taste and adjust seasonings as needed.
  5. Store in an airtight container in the fridge for up to one week. Shake well before use.
