This recipe is family friendly, high protein, and so festive. 

Ingredients (4 servings)
Turkey meatballs

1 pound ground turkey

1 egg

½ cup almond flour or breadcrumbs

2 tablespoons chopped parsley

1 teaspoon minced garlic

1 teaspoon rosemary

Zest of one orange

1 teaspoon salt

Pepper

Veggies

2 cups Brussels sprouts, halved

2 cups butternut squash cubes

1 orange, thinly sliced

2 tablespoons olive oil

Salt and pepper

Glaze

2 tablespoons orange juice

1 tablespoon honey

1 teaspoon Dijon mustard

Instructions

  1. Mix meatball ingredients and roll into 12 to 14 meatballs.
  2. Spread veggies on a sheet pan, toss with olive oil, salt, and pepper.
  3. Add meatballs and scatter orange slices around the pan.
  4. Roast at 400 F for 20 to 24 minutes.
  5. Whisk glaze and brush over meatballs during the last 5 minutes.
